Meredith Family Vineyards: The winery for Meredith Family is located east of Weaverville in the Hyampom Valley area of Trinity County on the east side of the Coastal Range. Randall Meredith, owner and winemaker at the estate is a doctor by trade and a winemaker by passion. There are 35 acres of vineyards that are used to make an award winning assortment of wines including Chardonnay, Cabernet Sauvignon, Merlot, Sangiovese, Sauvignon Blanc and a Bordeaux Blend. There is no tasting offered at the winery, however, they do maintain a tasting room in the small town of Weaverville that is open Monday thru Thursday 12:00 to 6:00 pm, Friday and Saturday 11:00 am to 6:00 pm and Sunday 11:00 am to 5:00 pm.

Onemaple Vineyard & Winery: The winery located in the small rural community of Lewiston about half way between Trinity Center and Redding off Trinity Dam Road. This is a beautiful winding drive through the local coastal hills to the southern most end of Trinity Lake. The estate grows Chardonnay, Merlot, Cabernet Sauvignon, Syrah, Pinot Noir, Pinot Gris and Tempranillo. The winery owners, Ernie and Kristel Bell, took classes at UC Davis in enology and works with consultant Keith Groves to produce their wines. A new winery and tasting room is coming, but call first just to make sure before making the fairly long drive to the estate.

R. Merlo Estate Vineyards: Even in this wine region of remotely located wineries, this 130 acre estate is a ways from anywhere. The winery is located in the river valley of Hyampom tucked away in the Trinity Alps on the far western edge of Trinity County. This is incredibly beautiful area of wild rivers and tall trees. There is a serious diurnal shift here, with the high and low temperature in a given day showing a difference of 50 degrees or more, allowing the grapes to rest in the cool mists that envelope the valley in the evenings. The winery specializes in cooler region grapes with lower alcohol levels than is commonly found in many other parts of California. The winery currently produces a Cabernet Sauvignon, Syrah, Merlot, Sangiovese, Pinot Noir and Chardonnay. They offer tours and tasting by appointment only.
