Quick Broiled Salmon
with Tempranillo


This is another meal that requires very little cooking time and not a great deal of prep time, either.  It can be made in just about a half an hour including cutting and prepping.

Salmon and Balsamic (Serves 4)

6 oz filet of Salmon per person
2 Tbsp Lemon Juice
2 Tbsp Olive Oil
Sea Salt
Cracked Black Pepper
A Herb rub that contains dill, pepper flakes, garlic, thyme or rosemary
Whisk together lemon juice and olive oil until well blended. Brush on salmon. Top liberally with freshly ground pepper, salt and rub, press in. Allow to marinate 10-20 minutes but no more. Oil grill, and then heat barbeque. Cook roughly 5 minutes on each side depending on thickness of fish. When the fish turns an opaque color and flakes easily it is finished. The fish should have a nice crusty top made by the herbs.

Rice with Almonds and Mushrooms
1 Tbsp Olive Oil
2 Shallots, Small Chopped
2 Cloves Garlic, Fine Dice
1/4 Red Pepper, Small Chopped
1/4 Cup Sliced Almonds

6 Crimini Mushrooms, Small Chopped
1 TBSP herbs used above
1 tsp Salt
1/4 tsp pepper
1 1/2 Cup Chicken Stock
1/2 Cup White Wine

Heat skillet, add Olive Oil and heat. Add shallots, garlic, red pepper, almond and mushrooms; cook roughly 5 minutes until shallots are tender. Add herbs, salt, pepper, stock and wine. Bring to a boil, reduce heat and simmer 20 minutes, until liquid is absorbed.
