Rice with Almonds and Mushrooms
1 Tbsp Olive Oil
2 Shallots, Small Chopped
2 Cloves Garlic, Fine Dice
1/4 Red Pepper, Small Chopped
1/4 Cup Sliced Almonds

6 Crimini Mushrooms, Small Chopped
1 TBSP herbs used above
1 tsp Salt
1/4 tsp pepper
1 1/2 Cup Chicken Stock
1/2 Cup White Wine |
| Heat skillet, add Olive Oil and heat. Add shallots, garlic, red pepper, almond and mushrooms; cook roughly 5 minutes until shallots are tender. Add herbs, salt, pepper, stock and wine. Bring to a boil, reduce heat and simmer 20 minutes, until liquid is absorbed. |
