Ahi Taco Dinner with an Off-Dry Riesling
Spanish Rice
2 tbsp Olive Oil
1 cup Long Grain Rice
2 Cloves Garlic
1/4 cup chopped Sweet Onion
2 Bullion cubes
1 1/2 cups Water
1/2 cup dry white wine
2 tsp Cumin
1 Tbsp Chili Powder
1/2 cup chopped White Mushrooms
Salt & Pepper to taste
Add oil to frying pan and heat. Add rice, onion and garlic. Cook until onions are translucent and rice browned. Add water, wine and bullion, cover - bring to a boil. Reduce heat to low and add cumin, chili pepper and mushrooms. Cover and cook 20 minutes until water is absorbed and rice light; salt and pepper to taste.
Black Beans
1 can Black Beans
1 Tbsp Butter
Sour Cream
Cheddar or Monterey Jack Cheese, grated
Melt butter, add beans and allow to cook on low 5 to 10 minutes, until heated through. Place on Plate and top with Cheese and then Sour Cream
