Turkey or Chicken Stew- Ever wonder what to do with that leftover chicken or turkey after a meal? Don't want to throw it away because there is so much meat left? This is a very simple solution that takes little effort but is big on flavor. Its a wonderful meal after work and is delicious on a cold winter day. Cooked in a crock pot it cooks all day and takes just half an hour once you add the dumplings. Give it a try, you won't be sorry. |
2006 Lava Cap Reserve Chardonnay, El Dorado County. This is a wonderful wine with a nose of pears and green apples, a satiny, fairly full mouth feel and a great back ground of butter and oak. There is a lovely light yeastiness from the sur lie aging and just a slight dose of toastiness that creates a long, complex finish on the palate. This wine works perfectly with turkey or chicken in the stew and the dumplings, highlighting the body and fresh bread characters. |

Turkey Stew with Dumplings; Makes 6 servings |
The Stew:
1 chicken or turkey carcass, broken
2 Qts water
2 tsp salt
1 tsp pepper
1 Tbsp Herbs de Provence
1 medium onion, chopped
6 small red potatoes, quartered
1 carrot, chopped
2 stalks celery, chopped
1 Tbsp dried parsley
2 bay leaves

Dumplings:
1 1/2 cup flour
2 tsp baking powder
1/2 tsp salt
2 tsp paprika
1/4 cup fine grated parmesan cheese
1 Tbsp butter
3/4 cup milk
Mix first 4 ingredients with fork or pastry cutter, cut in butter. Add cheese and milk until well mixed.

Place carcass (1 1/2 cups meat can be used in place of carcass), water, spices and vegetables in crock pot. Cook on low for 6 to 7 hours, until meat is falling from bones and vegetables are tender. Remove bay leaf and bones. Take meat off carcass and place meat back in crock pot. Prepare dumplings and spoon rounded Tbsp sized dumplings on top of stew and cover. Cook 20 to 25 additional minutes or until dumplings are cooked throughout. Serve with a Caesar Salad for a full meal.
