Syrah with Ahi

Broiled Ahi, with rice and corn . Another in a series of quick evening meals, this takes no more than 30 minutes from start to finish. The tuna, with its crust of pepper, sea salt and Tuscan spices, creates just a hint of spiceness and herbaceosnos that plays to the same features of Syrah. The rice, cooked in chicken broth, mushrooms, almond garlic and scallions played nicely to the earthy quality of the wine. It wasn't a pairing made in heaven, but it was quite enjoyable.
003 Jarvis Tomei Syrah – The 2003 vintage was the first produced by Jarvis Tomei in this region.  The nose was full of blackberries and black cherries, chocolate, black pepper spice and that intriguing scent of dry earth with just a hint of that meatiness that can often mark a good Syrah.  On the palate the fruit was bright and clean in the attack followed by the chocolate and vanilla with a long finish that still had the fruit and oak spice, but all carried through with that lovely dry earthiness.  This is a fairly complex wine that evolved nicely on the palate, with soft rounded tannins and some excellent acid that is not often evident in a California Syrah.  See the write up on the wine and winery in our full article:Jarvis Tomei Syrah

Ahi with mushroom rice and corn – Makes 2 servings
Rice

2 cups chicken broth 1 cup long grained white rice
2 large cloves garlic, chopped
1 Tbsp olive oil/canola oil blend
2 scallion, sliced
1/4 cup sliced almonds
6 large white mushroooms, chopped
Salt and Pepper to taste

In a fry pan heat oil, add scallions, garlic and mushrooms. Cook for 5 minutes and add chicken broth, almond and rice. Cover and simmer until liquid absorbed, about 17 to 20 minutes. Salt and pepper to taste. Let stand 5 minutes and serve.

Ahi

Juice 1/2 lemon
1 Tbsp olive oil
Sea Salt Cracked black peppercorns
Dried whole thyme and rosemary

Preheat broiler. Whisk together lemon and olive oil, brush on ahi. Apply spice to a crust to cover, careful not to over do thyme and rosemary. Press into fish. Place under broiler 5 minutes each side. Fish should be done to medium. For rare shorten to 3 minutes on one side and 2 on the other. Allow to sit 5 minutes before eating.

Serve with steamed carrots or corn on the cob.
